It is a week end and I felt like I need to make something special for my son. I have some whole wheat buns in my refrigerator, as soon I saw them my brain said BURRRGGGEEERRRR!!!!! so I started to see if I have any potatoes and carrots to make a simple patty . I do have them, so what am I waiting for, lets start with the patty first.

Note- I felt like not using much oil, so I am pan frying the patties. Guilt free, yet comforting and kids will love it. You can add what ever kind of vegetables (cabbage, cauliflower, celery, lentils) you want your kids to eat. The best thing of the recipe is, it is done under 30 mins!!!

Hope you will all enjoy this patty and I would love to hear your comments on how it turned out to you.

Here I start the recipe-

Ingredients

3 potatoes peeled.
1 small onion diced

1 big carrot diced

10 green beans diced

½ cup soaked black eyed peas (optional)

1 tsp ginger garlic paste

½ tsp chilly powder

½ tsp salt

Method

In a pressure cooker add all the vegetables including black eyed peas with ¼ cup water and cook for 3 whistles.

When all the pressure is released from the pressure cooker, take all the vegetables into a bowl and mash with a fork.

Add ginger garlic paste, onions, salt, chilly powder and mix it well till you get a hard ball.

Take a hand full of this veggie mix and make a ball and flatten it with the center of your palm. (do not make it too thin, it has to be atleast ½ inch thick)

Heat a flat pan / tawwa and add ½ tsp oil or grease the pan with cooking spray and put the pattie on to the pan.

On a medium low heat, let the pattie fry till you see golden crust on the bottom.

Now flip the patty gently to the other side, add some more oil (1/2 tsp) and let it fry to a golden crust on the bottom side too.

Do the same procedure with the remaining dough. If your pan is big enough you can do 3 patties at the same time.

Enjoy this with green chilly chutney or sweet tamarind / date chutney or my son favorite ketchup. You will be licking your fingers or fork!!!!
