BottleGourd and sweet potato Stew / Sorakaya Chilakada dumpa pulusu

I have another challenging day. I got to do some aarons and also need to fix lunch for kids. I need to find something that i can cook fast (my favorite pressure cooker) and kids should eat with out any complaints. I opened the fridge to see what vegetables i can experiment with and i see this small bottle gourd lying in the fridge and I have a sweetpotato which is the main ingredient for this dish. Boom…this recipe came into my mind. Pulusu is very easy to cook and kids love them because of it’s sweet and sour taste. Sweet potato has such a high nutrional benefit.
Besides all these i have a sweet tooth and i always look forward to make this.
Here is the recipe-
- 1 small BottleGourd/ Sorakaya chopped to 1 inch thick
- 1 large sweet potato sliced.
- 3 green chillies
- 1 medium onion chopped
- lemon size tamarind
- 2 tbsp Jaggery
- 2 garlic cloves
- 1 tsp each of mustard seeds and cumin
- ¼ tsp of turmeric
- 1 red chili
- curry leaves
Directions
- Soak tamarind in water and micro wave it for 1 min and let it stand.
- Heat oil in a pressure cooker, add mustard seeds. When they crack, add cumin, garlic, turmeric, red chilies and curry leaves.
- Add green chili and onion. Add salt to let onions cook fast.
- When the onions are transparent, add bottle gourd and sweet potato pieces, sauté them for a min.
- Now add salt and chili powder to taste.
- Squeeze tamarind juice and add this to pressure cooker. Let all of them all mix together for a min and close the lid.
- Let it cook till 2 whistles. Let all the pressure is let off, open the cooker and let it boil till oil separates or to your consistency.
- Add 2 tbsp of jaggery . When you get the right consistency, turnoff the flame and top it off with cilantro.
- This dish has a sweet and sour taste and kids love this. Serve it with rice, ghee and some papad.
Sweet Potato is beneficial for low blood pressure. It is a very good food for diabetics, because it helps stabilize blood sugar levels.
